Chicken Marinade

Frying

Sandwich Assembly

Method

Chicken Marinade

  1. 1

    Prepare the Chicken

In a large bowl, combine the boneless chicken breasts and dill pickle juice. Cover and marinate in the refrigerator for at least 1 hour, or overnight for best flavor.

  2. 2

    Make the Egg Mixture

In another bowl, whisk together the milk and egg until well combined.

Breading

  1. 3

    Mix the Breading Ingredients

In a shallow dish, mix the all-purpose flour, powdered sugar, salt, paprika, and black pepper together until evenly combined.

Frying

  1. 4

    Heat the Oil

In a large heavy-bottomed pot, heat the peanut oil over medium-high heat until it reaches 350°F (175°C).

  2. 5

    Fry the Chicken

Remove the chicken from the marinade and dip each piece into the egg mixture, followed by dredging in the flour mixture. Carefully place the breaded chicken in the hot oil, frying in batches if necessary. Cook for about 4-5 minutes on each side, or until golden brown and cooked through (internal temperature should reach 165°F/74°C).

  3. 6

    Drain the Chicken

Once cooked, remove the chicken from the oil and let it drain on a paper towel-lined plate.

Sandwich Assembly

  1. 7

    Assemble the Sandwich

To assemble, place each piece of fried chicken on a sandwich bun, top with 2 slices of pickles, lettuce, and a slice of tomato. Close the sandwich with the other half of the bun.

  2. 8

    Serve

Serve the sandwiches warm with your favorite dipping sauces or sides.
