Pastry Preparation

    Make the Dough

    In a large mixing bowl, combine all-purpose flour and salt. Gradually add water and mix until a dough forms. Knead for about 10 minutes until smooth and elastic.

    Rest the Dough

    Cover the dough with a damp cloth and let it rest for at least 30 minutes at room temperature.

    Roll the Dough

    Divide the dough into 12 equal portions. Roll out each portion as thinly as possible, using flour to prevent sticking.

Filling Preparation

    Prepare the Filling

    In a bowl, mix the chopped walnuts, chopped almonds, ground cinnamon, and sugar until well combined.

Baklava Assembly

    Layer the Pastry

    Preheat the oven to 350°F (175°C). Melt the unsalted butter in a saucepan. Brush a baking dish with melted butter. Place one sheet of dough in the dish and brush with butter. Repeat this process, layering 8 sheets of dough, brushing each with butter.

    Add the Filling

    Spread half of the nut filling evenly over the layered dough. Continue layering with 4 more sheets of dough, brushing each with butter.

    Finish Layering

    Spread the remaining nut filling over the dough. Layer again with the remaining sheets of dough, brushing each with butter, for a total of 12 layers on top.

    Cut the Baklava

    Using a sharp knife, cut the baklava into diamond or square shapes before baking.

    Bake the Baklava

    Bake in the preheated oven for 45-50 minutes or until golden brown.

Syrup Preparation

    Prepare the Syrup

    In a saucepan, combine honey, water, and vanilla extract. Bring to a boil, then reduce heat and simmer for 10 minutes. Allow to cool slightly.

    Add Syrup to Baklava

    Once the baklava is baked, remove from the oven and immediately pour the syrup evenly over the hot baklava. Allow it to soak for at least 4 hours or overnight before serving.
