Method

Prep vegetables

    Dice and slice

    Wash all produce. Dice the roma tomato into small 1/4-inch pieces, core and thinly slice or dice the bell pepper, finely chop the half onion, and slice the mushrooms about 1/4-inch thick. Roughly chop the spinach if leaves are large.

    Pat the tomato pieces lightly with a paper towel to remove excess moisture and set aside to keep the omelette from becoming watery.

Cook vegetables

    Heat a 10-inch nonstick skillet over medium heat. Add olive oil and when shimmering add the onion and bell pepper. Sauté 2–3 minutes until softened and translucent.

    Add mushrooms and cook 2–3 more minutes until they release moisture and begin to brown.

    Add spinach and cook just until wilted, about 30–45 seconds. Remove vegetables to a plate and spread them out so any remaining moisture dissipates; set aside.

Prepare egg mixture

    Crack the eggs into a bowl. Add milk, salt, and black pepper. Whisk vigorously until fully combined and slightly frothy (about 20–30 seconds). This incorporates air for a fluffier omelette.

Cook omelette

    Return the same skillet to medium-low heat. Add butter and swirl to coat the pan. Once the butter foams but before it browns, pour the beaten eggs into the skillet, tilting the pan so the eggs form an even layer.

    Let the eggs set undisturbed for 20–30 seconds, then use a spatula to gently pull the set edges toward the center while tilting the pan to allow uncooked egg to run underneath. Repeat around the pan until most of the egg is set but the surface is still slightly glossy (about 1–1.5 minutes total).

    Evenly distribute the cooked vegetables over one half of the omelette. Sprinkle shredded cheddar cheese on top of the vegetables and dot with chopped parsley if using.

    Using the spatula, carefully fold the empty half of the omelette over the filled half. Let cook for another 30–45 seconds so the cheese melts and internal temperature rises.

    Slide the omelette onto a plate, season with a pinch of salt and pepper to taste and add optional hot sauce if desired.

Serve

    Serve immediately while hot. Garnish with extra parsley or a few diced tomato pieces if desired.
