Beat eggs
Crack 4 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1/4 teaspoon freshly ground black pepper. Whisk vigorously until the mixture is uniformly pale and slightly frothy, about 30–45 seconds.

Heat pan
Place a nonstick or well-seasoned 8–10 inch skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and let it melt, swirling to coat the pan. The butter should foam but not brown.

Cook eggs
Pour the beaten eggs into the skillet. Let them sit undisturbed for about 10–15 seconds until edges begin to set. Using a heatproof spatula, gently pull cooked edges toward the center while tipping the pan to allow uncooked egg to flow to the edges. Continue this gentle folding motion until the surface is still slightly wet but mostly set, about 1–2 minutes total (eggs should be creamy, not dry). Keep heat at medium-low to avoid overbrowning.

Prepare crab filling
While eggs cook, combine 3 oz lump crab meat, 1 finely minced shallot, 1 thinly sliced scallion, 1 tablespoon chopped flat-leaf parsley, 1 teaspoon mayonnaise, 1 teaspoon fresh lemon juice, 1 tsp olive oil, 1/4 teaspoon salt, and 1/8 teaspoon black pepper in a small bowl. Gently fold the ingredients so the crab stays in lumps; avoid overmixing. Taste and adjust lemon or salt as needed.

Warm the crab (optional)
If you prefer the crab warm, briefly warm the crab mixture in a small skillet over low heat for 30–45 seconds while stirring gently, just until heated through; do not overcook as crab will dry out. Alternatively, keep at room temperature.

Assemble omelette
When eggs are mostly set but still slightly moist on top, spoon the crab filling evenly over one half of the omelette (reserve a small amount of parsley for garnish). Use a spatula to gently fold the opposite half of the omelette over the filling to form a half-moon. Press lightly to seal.
