Cook hash browns
While the bacon cooks or after removing bacon (use same pan if desired), heat a separate small nonstick skillet over medium-high and add 1 tsp vegetable oil. When oil shimmers, add 1/2 cup frozen shredded hash browns spread into an even layer. Press lightly with a spatula. Cook 3–4 minutes without stirring until bottom is golden and crisp. Flip in sections and cook another 2–3 minutes until cooked through and crisp. Season with 1/4 tsp salt and 1/8 tsp black pepper. Transfer to plate and keep warm.
Grits (alternative to hash browns)

Cook quick grits
If serving grits instead of hash browns, bring 3/4 cup water and 1/8 tsp salt to a boil in a small saucepan. Slowly whisk in 1/4 cup quick-cooking grits. Reduce heat to low and simmer, whisking occasionally, for 2–4 minutes until thickened. Remove from heat and stir in 1/2 tsp butter and 1 tsp milk (optional) until smooth. Keep covered and warm.

Scramble eggs
Crack 2 large eggs into a small bowl, add 1 tbsp milk, 1 tsp salt, and 1/4 tsp black pepper. Whisk until combined and slightly frothy. Wipe a medium nonstick skillet clean and return to medium-low heat. Add 1 tbsp butter and let it melt, coating the pan. Pour in the egg mixture. Let eggs sit undisturbed 10–15 seconds, then gently push cooked edges toward the center with a silicone spatula, tilting the pan to let uncooked egg flow underneath. Continue folding every 10–15 seconds until eggs are softly set but still moist, about 1½–2 minutes total. Remove from heat (they will finish setting off the heat) and transfer to plate.

Toast and butter
Toast 1 slice of bread in a toaster until golden to your child's liking. Spread 1 tsp butter evenly over toast while warm.
