Waffle Batter

Method

Waffle Batter

  1. 1

    Preheat & Prepare

Preheat your Belgian waffle iron according to manufacturer instructions. Lightly brush or spray the grids with a little melted butter to prevent sticking.

  2. 2

    Combine Dry Ingredients

In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt until evenly combined.

  3. 3

    Mix Wet Ingredients

In a separate bowl, beat the eggs lightly, then whisk in the whole milk, melted butter, and vanilla extract until smooth.

  4. 4

    Make Batter

Pour the wet ingredients into the dry ingredients and gently whisk until just combined. Do not overmix — a few small lumps are fine. Let the batter rest for 5 minutes to allow the baking powder to activate and the gluten to relax.

Cook Waffles

  1. 5

Spoon or pour batter onto the preheated waffle iron (amount will depend on your iron size; roughly 3/4 to 1 cup for a standard Belgian waffle iron). Close the lid and cook until the waffle is golden brown and crisp, typically 3–5 minutes. Remove carefully and transfer to a warm plate or keep in a low oven (200°F / 95°C) on a wire rack to maintain crispness while you cook remaining waffles.

Prepare Fruit & Toppings

  1. 6

    Prepare Strawberries

Rinse and hull the strawberries. Slice them into 1/4-inch thick slices. Reserve about 3-4 slices for garnish and place the remainder in a bowl.

  2. 7

    Prepare Blueberries

Rinse and drain the blueberries. Pat dry with a paper towel and add to the bowl with sliced strawberries.

  3. 8

    Prepare Banana

Peel the banana and slice on the diagonal into 1/4-inch thick slices. Add to the fruit bowl and gently toss the fruit to combine.

  4. 9

    Warm Strawberry Syrup (optional)

If desired, warm the strawberry syrup briefly in the microwave (10–15 seconds) or in a small saucepan over low heat so it pours easily.

  5. 10

    Powdered Sugar

Place the powdered sugar in a fine sieve or small sifter and be ready to dust the finished waffle just before serving.

Assemble & Serve

  1. 11

Place one hot Belgian waffle on a plate. Spoon a generous portion of the mixed strawberries, blueberries, and banana over the center of the waffle.

  2. 12

Drizzle 1–2 tablespoons (or to taste) of warmed strawberry syrup over the fruit and waffle. Sprinkle the top lightly with powdered sugar using the sieve.

  3. 13

Garnish with a few reserved strawberry slices and a light pat of butter if desired. Serve immediately while the waffle is hot and crisp.
