Cornmeal-fried Oysters

Prepare oysters
Place fresh shucked oysters in a bowl and gently pat dry with paper towels. Transfer to a shallow dish and pour buttermilk over them. Let sit 10–15 minutes to mellow brine and help coating adhere.

Make dredge
In a shallow wide bowl combine all-purpose flour, cornmeal, panko (if using), smoked paprika, cayenne, garlic powder, salt, and black pepper. Whisk to evenly distribute spices.

Dredge oysters
Remove oysters from buttermilk one by one, allowing excess to drip off, then coat thoroughly in the cornmeal mixture. Press gently so the coating adheres. Place coated oysters on a tray while you heat oil.

Fry
Heat vegetable oil in a deep skillet or saucepan to 350°F (175°C) — about 1–1.5 inches deep. Test with a pinch of cornmeal; it should sizzle steadily. Fry oysters in small batches (do not crowd) 1.5–2 minutes per side or until golden brown and crisp. Use a slotted spoon to transfer to a wire rack set over a baking sheet; season lightly with a pinch of salt while hot. Keep warm in a low oven (200°F/95°C) if needed.

Poach eggs
Bring a wide shallow pot of water to a gentle simmer (not a rolling boil). Add vinegar and salt. Stir to create a gentle whirlpool. Crack one egg into a small ramekin and gently slip into the center of the whirlpool. Poach 3–3.5 minutes for a runny yolk (longer for firmer). Remove with a slotted spoon, gently blot on paper towel, and keep warm on a plate. Repeat with remaining eggs. If needed, reheat briefly in warm water (keep it below simmer) before plating.
Sriracha Hollandaise

Prepare double boiler
Set a heatproof bowl over a pot of barely simmering water (bowl should not touch water). Ensure bowl is warm and steam-filled but not roaring.

Emulsify with butter
Slowly drizzle the hot melted butter into the yolks while whisking continuously to create a thick, glossy emulsion. If sauce gets too thick, whisk in the hot water teaspoon by teaspoon to loosen. Once fully incorporated, remove from heat.

Season and spice
Whisk in sriracha, salt and white pepper or a pinch of cayenne. Taste and adjust lemon, sriracha or salt to balance heat and acidity. Keep warm in a thermos or over very low heat (off direct steam) until ready to serve; if it sits too long, rewarm gently and whisk to re-emulsify.
