Prepare Crab

Rinse and inspect
Rinse the crab claws under cold running water to remove any sand or debris. Pat dry thoroughly with paper towels. If claws are very large, use kitchen shears to slightly score the shell on the inside curve to help marinade penetrate and make cracking easier after cooking.

Place the cleaned, dry crab claws in a shallow bowl or zip-top bag sized for marinating (use ½ lb per serving portion).

In a small bowl, whisk together the olive oil, lemon juice, minced garlic, Dijon mustard, soy sauce, and honey until emulsified.

Stir in the chopped parsley, Old Bay seasoning, crushed red pepper flakes, kosher salt, and black pepper. Taste and adjust seasoning — add a little more lemon for brightness or a pinch more salt if needed.
Marinate

Pour about two-thirds of the house marinade over the crab claws, reserving the rest as a finishing sauce. Turn claws to coat evenly. Cover and refrigerate for 20–30 minutes (no more than 1 hour) to let flavors penetrate. If using live or very fresh just-cooked claws, marinate only briefly (10–15 minutes).

Steaming (recommended for delicate texture)
Set up a steamer pot with about 1–2 inches of water and bring to a gentle boil. Place crab claws in the steamer basket in a single layer. Steam over boiling water for 6–8 minutes for ½ lb portion (8–10 minutes for 1 lb), until shells are bright and meat is opaque. Remove carefully with tongs.

Alternative — Roasting
Preheat oven to 425°F (220°C). Arrange marinated crab claws on a rimmed sheet pan in a single layer. Roast 10–12 minutes for ½ lb (12–15 minutes for 1 lb), tossing once halfway, until shells are fragrant and meat is opaque. Finish under broiler 1–2 minutes for light charring if desired.

Alternative — Searing (for a touch of char)
Heat a large cast-iron skillet or heavy pan over high heat until very hot. Add a thin film of oil or 1 tbsp melted butter. Sear marinated claws 1.5–2 minutes per side for ½ lb portion (2–3 minutes per side for larger), turning once, until edges are lightly browned and meat is cooked through. Be careful of splatter.
