Prepare Crawfish Filling

    Sauté aromatics

    Heat 1 tablespoon unsalted butter in a medium nonstick skillet over medium heat until foaming. Add the minced shallot and cook, stirring, until softened and translucent, about 2–3 minutes. Add the minced garlic and cook 30–45 seconds until fragrant, taking care not to brown.

    Add crawfish

    Add 1 cup crawfish tails to the skillet. Toss to combine with shallot and garlic and cook 1–2 minutes to warm through.

    Season and finish filling

    Stir in 1 teaspoon Worcestershire sauce, 1 teaspoon lemon juice, 1 teaspoon hot sauce (if using), 1 teaspoon kosher salt and 1/2 teaspoon freshly ground black pepper. Cook another minute to meld flavors. Stir in 1 tablespoon chopped fresh parsley, then transfer the filling to a small bowl and keep warm while you make the omelette.

Make the Omelette

    Beat eggs

    Crack 4 large eggs into a bowl. Add 2 tablespoons whole milk, 1 teaspoon salt and 1 teaspoon freshly ground black pepper. Whisk vigorously until completely combined and slightly frothy (about 20–30 seconds). This creates a tender omelette.

    Heat pan

    Place a 10-inch nonstick skillet over medium–medium-low heat. Add 2 tablespoons unsalted butter and swirl until melted and foaming but not browned. The pan temperature should be moderate: butter foams and just begins to sizzle slightly.

    Cook eggs

    Pour the beaten eggs into the skillet. Let them sit, undisturbed, for 10–15 seconds until the edges begin to set. Using a rubber spatula, gently push the set edges toward the center while tilting the pan so uncooked egg flows to the edges. Continue this gentle stirring and tilting motion for about 45–60 seconds until the eggs are mostly set but still slightly glossy on top.

    Add filling and cheese

    Sprinkle half (about 1/4 cup) of the grated Gruyère or sharp cheddar evenly over one half of the omelette. Spoon the warm crawfish filling on top of the cheese in a line down the center (or slightly off center).

    Fold and finish

    Using the spatula, carefully fold the empty half of the omelette over the filling to create a semicircle. Let the omelette cook gently for another 30–60 seconds to melt the cheese and finish cooking through, keeping the interior tender (do not overcook). If desired, cover the skillet for 30 seconds to speed melting.

    Plate

    Slide the omelette onto a warm plate seam-side down. Sprinkle the remaining 1/4 cup grated cheese over the top if you like extra cheese, then garnish with 1 tablespoon thinly sliced fresh chives and 1 tablespoon microgreens or parsley.

    Serve immediately while hot with a lemon wedge on the side. Suggested accompaniments: crusty bread or a light green salad. To prep ahead: cook the crawfish filling and refrigerate up to 24 hours; rewarm gently before adding to the omelette. Adjust heat of hot sauce and seasoning to taste.
