Crack the eggs into a medium bowl. Add the milk, kosher salt, and freshly ground black pepper. Whisk until fully blended and slightly frothy, about 20–30 seconds. Set aside.

Sauté mushrooms and aromatics
Heat a 10-inch nonstick or well-seasoned skillet over medium heat. Add 1 teaspoon olive oil. When it shimmers, add the sliced mushrooms in a single layer and let them brown undisturbed for 2 minutes. Stir, then add the minced shallot and continue to cook for 2–3 minutes until softened. Add the minced garlic and fresh thyme and cook for 30–45 seconds until fragrant. Season with 1/4 tsp salt and 1/4 tsp black pepper. Transfer the mushroom mixture to a bowl and set aside.

Cook Conecuh
Return the skillet to medium heat (no need to add more oil). Add the diced Conecuh sausage and cook, stirring occasionally, until it is warmed through and beginning to brown and render fat, about 3–4 minutes. If the sausage releases a lot of fat, spoon off excess so the omelette won't be greasy. Combine the sausage with the mushroom mixture and keep warm.
Make the omelette

Wipe the skillet clean and return to medium-low heat. Add 1 tablespoon unsalted butter and let it melt until foaming but not browned.

Pour the beaten eggs into the skillet and tilt the pan to spread them into an even layer. Using a spatula, gently pull the edges toward the center every 10–15 seconds to let uncooked egg flow to the edges; tilt the pan as needed. Cook until the eggs are mostly set but still slightly glossy on top, about 1½–2 minutes.

Spoon the warm mushroom and Conecuh mixture onto one half of the omelette in an even layer, leaving a 1/2-inch border. Sprinkle the shredded smoked Gouda over the filling (about 1 oz). If using, add the lemon zest and half the chives over the cheese.

Carefully fold the empty half of the omelette over the filling using a spatula. Let cook for another 20–30 seconds to melt the cheese and finish setting. Tilt the pan and, if desired, briefly invert the omelette onto a plate seam-side down.
Finish & serve

Garnish with the remaining chives and an optional small sprinkle of extra smoked Gouda or a light grind of black pepper. Serve immediately with toast or a simple green salad.
