Crack 3 large eggs into a medium bowl. Add 2 tablespoons whole milk, 1 teaspoon salt, and 1 teaspoon freshly ground black pepper. Whisk vigorously until mixture is homogeneous and slightly frothy (about 20–30 seconds). This incorporates air for a light omelette.

Grate about 3 tablespoons cheddar cheese and, if using, 1 tablespoon grated Parmesan. Chop 1 tablespoon fresh chives. Keep the cheese and chives within easy reach so you can add them quickly once the eggs begin to set.

If you prefer extra fillings (e.g., sautéed mushrooms, diced ham, or peppers), pre-cook them until they are fully cooked and dry of excess moisture before adding to the omelette.

Place a nonstick or well-seasoned 8–10 inch (20–25 cm) skillet over medium-low to medium heat. Add 1 tablespoon unsalted butter and 1 teaspoon neutral oil (if using) to the pan. Let the butter melt and foam but not brown—this normally takes 30–60 seconds. The oil helps prevent the butter from burning and gives a slightly higher cooking temperature.

Sprinkle the grated cheddar (and Parmesan, if using) evenly over one half of the omelette. Sprinkle the chopped chives over the cheese if desired.

Using the spatula, gently lift the opposite edge of the omelette and tilt the pan so uncooked egg flows underneath for about 10–20 seconds, or cover the pan briefly (10–15 seconds) to help the top finish cooking without overbrowning. The goal is a tender set with a slightly creamy interior.
