In a large bowl whisk together the flour, granulated sugar, baking powder, and salt until evenly combined.

Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix; small lumps are okay. Let the batter rest 5 minutes while you prepare the topping.

When waffle iron is hot, pour the recommended amount of batter for your iron and cook until golden brown and crisp. Transfer cooked waffle to a warm oven (200°F / 95°C) on a rack to keep crisp while you make bananas foster.
Bananas Foster Topping

Peel the bananas and slice on the diagonal into 1/2-inch thick pieces.

In a large sauté pan over medium heat melt the 2 tablespoons unsalted butter. Add the brown sugar and cinnamon and stir until sugar dissolves and mixture is bubbling lightly, about 1–2 minutes.

Add the banana slices in a single layer and gently toss or spoon sauce over them. Cook for 1–2 minutes per side until bananas are warmed, slightly softened, and coated in syrup but not falling apart.

Remove pan from heat briefly and stir in the lemon juice (this brightens the sauce). Return to very low heat.

Carefully add the dark rum. If you want the classic flambé, tilt the pan away from you and ignite the rum with a long lighter (optional). Allow flames to subside and alcohol to burn off, about 20–30 seconds. If you prefer not to flambé, simply simmer for 30–60 seconds to meld flavors.

Stir in the chopped pecans and remove from heat. Spoon the bananas and sauce into a small bowl or keep in pan for plating.

Place one warm waffle on a plate. Spoon generous portions of the warm bananas foster and sauce over the waffle, letting sauce drip down the sides.

Serve immediately with a small pitcher of maple syrup or a little extra melted butter on the side if desired.
