Pancake Batter
Method
Preparation Steps
- 1
Make the Pancake Batter
In a large bowl, whisk together flour, baking powder, baking soda, salt, and sugar. In another bowl, mix the milk, eggs, and melted butter. Mash ripe bananas and add them to the wet ingredients. Combine the wet and dry ingredients until just mixed.
- 2
Cook the Pancakes
Preheat a griddle or non-stick skillet over medium heat. Pour 1/4 cup of batter onto the griddle for each pancake. Cook until bubbles form on the surface, then flip and cook the other side until golden brown.
- 3
Prepare the Banana Brown Sugar Syrup
In a saucepan, melt butter over medium heat. Add brown sugar, mashed bananas, vanilla extract, cinnamon, and water. Stir until the mixture thickens and becomes syrupy.
- 4
Make the Vanilla Buttercream
In a mixing bowl, cream the unsalted butter until smooth. Gradually add powdered sugar and mix well. Add vanilla extract and milk, and mix until fluffy.
- 5
Make the Candied Pecans
In a saucepan, combine sugar and water over medium heat. Stir until the sugar dissolves. Add pecan halves, and cook until the mixture is thick and the pecans are coated. Let them cool on parchment paper.
- 6
Serve
Stack pancakes on a plate, drizzle with banana brown sugar syrup, top with a dollop of vanilla buttercream, and sprinkle with candied pecans.
