Marinate the Chicken
In a large bowl, combine buttermilk, salt, black pepper, and cayenne pepper. Add the chicken pieces, ensuring they are fully submerged. Cover and refrigerate for at least 2 hours or overnight for maximum flavor.

Prepare the Coating
In a separate bowl, mix the flour, smoked paprika, garlic powder, onion powder, cayenne pepper, salt, and black pepper. This will be your dry coating.

Dredge the Chicken
Remove the marinated chicken from the buttermilk and shake off excess. Dredge each piece in the seasoned flour mixture, pressing to adhere well. Place coated chicken on a wire rack and let rest for 15 minutes.

Fry the Chicken
In a large heavy-bottomed pot, heat vegetable oil to 350°F (175°C). Carefully add chicken pieces in batches, ensuring not to overcrowd the pot. Fry for 12-15 minutes or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

Drain and Serve
Remove the fried chicken and place it on a paper towel-lined plate to drain excess oil. Serve hot as a handheld meal.
