1. Prepare Vegetables

Wash and prep all vegetables. Shred the carrot, julienne the cucumber and red bell pepper, slice the avocado, and chop the green onions and cilantro.

2. Soak Rice Paper

Fill a large shallow dish with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds or until it becomes pliable. Remove and lay it flat on a clean surface.

3. Add Filling

Place a small amount of each vegetable in the center of the rice paper wrapper, leaving space at the edges for rolling.

4. Roll it Up

Fold the sides of the rice paper over the filling, then roll it up tightly from the bottom to the top. Repeat this process with the remaining wrappers and filling.
