Preparation
1. Prepare the Batter
In a mixing bowl, combine rice flour, tapioca starch, water, and salt. Whisk until smooth and there are no lumps. Let the batter rest for about 30 minutes.
2. Prepare the Steamer
Fill a steamer pot with water and bring it to a boil. Grease a flat steaming tray or a shallow dish with cooking oil.
3. Steam the Noodle Rolls
Pour a thin layer of the batter onto the greased steaming tray. Cover and steam for about 5-7 minutes, or until the surface looks set and slightly translucent.
4. Rolling the Noodles
Once cooked, remove the tray from the steamer. Allow it to cool for a minute before gently lifting the noodle sheet. Roll it up carefully and place it on a plate. Repeat the steaming and rolling process with the remaining batter.
5. Serve
Cut the rolls into desired lengths and serve with house soy sauce or your choice of toppings such as sautéed vegetables, shrimp, or herbs.
