    Roll the pork belly tightly and tie it with kitchen twine at several intervals to maintain its shape.

    Searing

    In a hot skillet, sear the pork belly on all sides until browned. This should take about 5-7 minutes.

    Prepare the Braising Liquid

    In a pot, combine soy sauce, mirin, sake, sugar, sliced ginger, smashed garlic, green onions, and water. Bring to a simmer.

    Braise the Pork

    Add the seared pork belly to the pot and cover. Reduce the heat to low and let it braise for about 2 hours, turning occasionally.
