Prepare the Chashu
In a pot, combine pork belly, soy sauce, mirin, and a pinch of salt. Add enough water to cover the pork. Simmer on low heat for 2-3 hours until tender. Once cooked, let it cool and slice thinly.

Cook the Ramen Noodles
In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.

Prepare the Broth
In a large pot, bring dashi broth to a simmer. Stir in miso paste until fully dissolved. Adjust salt as needed.

Assemble the Ramen
In serving bowls, place cooked ramen noodles. Ladle hot broth over the noodles. Top with sliced chashu, kikurage mushrooms, green onions, sesame seeds, and a piece of nori seaweed.
