Noodles and Soup Base

Method

Preparation

  1. 1

    Prepare the Noodles

Bring a large pot of water to a boil. Add the dried tsukemen noodles and cook according to the package instructions, usually about 5-7 minutes. Once cooked, drain and rinse under cold water to stop cooking.

  2. 2

    Make the Soup Base

In a saucepan, combine soy sauce, mirin, dashi stock, and sesame oil. Bring to a gentle simmer over medium heat, stirring frequently. Allow it to simmer for 5 minutes to allow the flavors to meld.

  3. 3

    Prepare Toppings

Chop the green onions and set aside. Prepare soft-boiled eggs by boiling them for 6-7 minutes, then placing them in cold water. Once cooled, peel and slice them in half.

  4. 4

    Assemble the Dish

Divide the cooked noodles among four bowls. Ladle the hot soup base into small bowls for dipping. Top the noodles with chopped green onions, nori sheets, and soft-boiled egg halves. Drizzle chili oil over the top to taste.
