Cook the Ramen Noodles
Bring a pot of water to a boil. Add the ramen noodles and cook according to package instructions until al dente. Drain and rinse under cold water to stop the cooking process.

Prepare the Toppings
While the noodles are cooking, slice the pork chashu, bamboo shoots, green onions, and yellow onion.

Mix the Sauce
In a large bowl, combine soy sauce, sesame oil, and chili oil (if using). Adjust seasoning with salt to taste.

Combine Noodles and Sauce
Add the drained ramen noodles to the bowl with the sauce. Toss to coat the noodles evenly.

Assemble the Dish
Add the sliced pork chashu, bamboo shoots, green onions, yellow onion, and fish powder on top of the noodles. Gently place the raw egg yolks on top.
