Marinating the Chicken
In a large bowl, combine soy sauce, sake, mirin, minced garlic, grated ginger, salt, and black pepper. Add the chicken thighs and mix well to coat. Cover and marinate in the refrigerator for at least 30 minutes, preferably 1-2 hours.

Preparing for Frying
After marinating, remove the chicken from the refrigerator. Drain excess marinade and toss the chicken pieces in cornstarch until evenly coated.

Frying the Chicken
In a deep frying pan or pot, heat the vegetable oil over medium-high heat. Once the oil is hot (about 170-180°C or 340-360°F), carefully add the coated chicken pieces in batches. Fry until golden brown and crispy, about 5-7 minutes per batch. Remove and drain on paper towels.

Serving
Serve the karaage hot with a side of mayonnaise for dipping.
