Cooking Instructions

  1. 1

    Prepare the Pork Belly

Roll the pork belly tightly and tie it with kitchen twine at 1-inch intervals. This helps it maintain its shape while cooking.

  2. 2

    Sear the Pork

In a large pot, sear the pork belly on all sides over medium-high heat until browned. This should take about 5-7 minutes.

  3. 3

    Make the Braising Liquid

In the same pot, add soy sauce, mirin, sake, sugar, green onions, garlic, ginger, and water. Stir to combine.

  4. 4

    Braise the Pork

Return the seared pork belly to the pot. Bring the liquid to a boil, then reduce the heat to low. Cover and let it simmer for 2-3 hours until tender.

  5. 5

    Cool and Slice

Remove the pork belly from the pot and let it cool slightly. Once cool, slice it into thin pieces.

  6. 6

    Serve

Serve the chashu slices as a topping for ramen or enjoy with rice and vegetables.
