    Prepare the Pork Belly

    Roll the pork belly tightly and tie it with kitchen twine to hold its shape.

    Sear the Pork

    In a pot over medium-high heat, sear the tied pork belly on all sides until browned.

    Add Aromatics and Liquid

    Add sliced ginger, crushed garlic, soy sauce, mirin, sake, sugar, green onions, and water into the pot.

    Simmer the Chashu

    Bring to a boil, then reduce heat to low. Cover and simmer for 2-3 hours until tender, turning occasionally.

    Once cooked, allow the chashu to cool in the liquid. Slice into thin pieces when ready to serve.
