    Prepare the Bean Sprouts

    Rinse the moyashi (bean sprouts) under cold water and drain them well.

    Blanch the Bean Sprouts

    In a pot of boiling water, blanch the bean sprouts for about 2 minutes until tender. Drain and rinse under cold water to stop the cooking process. Set aside.

    Prepare the Marinade

    In a bowl, finely chop the habanero pepper (remove seeds for less heat if desired). Add soy sauce, rice vinegar, sesame oil, minced garlic, chopped green onions, salt, and black pepper. Mix well.

    Combine and Marinate

    Add the blanched bean sprouts to the marinade. Toss gently to coat all the sprouts evenly. Cover and refrigerate for at least 30 minutes to allow the flavors to meld.

    Serve Chilled

    After marinating, serve the chilled habanero moyashi as a spicy side dish or appetizer.
