Chashu Preparation

    Prepare the Pork Belly

    Roll the pork belly tightly and tie it with kitchen twine to hold its shape.

    Sear the Pork

    In a large pot, heat the cooking oil over medium-high heat. Add the pork belly and sear until browned on all sides.

    Add chopped ginger, crushed garlic, and sliced green onions to the pot and sauté for a few minutes until fragrant.

    Pour in the soy sauce, mirin, sake, sugar, and water. Bring to a boil.
