Ajitama Preparation

    Boil the Eggs

    Place the eggs in a pot and cover them with cold water. Bring to a boil over medium heat. Once boiling, cover the pot, turn off the heat, and let the eggs sit for 6-7 minutes.

    Prepare the Marinade

    In a separate bowl, mix together the soy sauce, mirin, sugar, and water until the sugar is dissolved.

    Cool and Peel the Eggs

    After the eggs have finished cooking, transfer them to an ice bath to cool for about 5 minutes. Once cooled, gently peel the eggs.

    Marinate the Eggs

    Place the peeled eggs into a container and pour the marinade over them. Make sure the eggs are fully submerged. Cover and refrigerate for at least 4 hours, preferably overnight.

    Serve

    Remove the eggs from the marinade, slice them in half, and serve on top of ramen or as a snack.
