Mix the dough

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition.

Combine dry ingredients

In another bowl, whisk together the all-purpose flour, baking powder, and salt. Gradually add this mixture to the creamed mixture, mixing until just combined. Stir in the vanilla extract.

Cover the dough with plastic wrap and refrigerate for at least 30 minutes.

Prepare the filling

In a medium bowl, combine the diced apples, ground cinnamon, brown sugar, and lemon juice. Mix well and set aside.

Preheat your oven to 350°F (175°C).

Roll out the dough

Once the dough is chilled, divide it into two portions. Roll out one portion on a floured surface to fit your baking dish (approximately 9x13 inches).

Place the rolled-out dough into the baking dish, then spread the apple filling evenly over the dough.

Roll out the second portion of dough and place it over the apple filling. Seal the edges by pressing them together.
