Preparation Steps
- 1
Cook the protein
If using chicken, season the chicken breast with salt, pepper, cumin, and chili powder. Heat olive oil in a skillet over medium heat. Cook the chicken for about 6-7 minutes on each side until fully cooked and no longer pink in the center. If using steak, season similarly and cook until desired doneness, about 4-5 minutes per side for medium-rare. Let rest before slicing.
- 2
Prepare the beans
While the protein is cooking, rinse and drain the canned black beans. Heat them in a small pot over medium heat until warmed through, adding a pinch of salt if desired.
- 3
Assemble the bowl
In a large bowl or plate, layer the cooked rice as the base. Top with sliced chicken or steak, followed by black beans, diced avocado, shredded lettuce, crumbled queso fresco, and pico de gallo.
- 4
Serve
Drizzle with additional olive oil or your favorite dressing if desired. Serve warm and enjoy!
