1. Prepare the Ingredients
Chop the white onion, cilantro, and pineapple into small pieces. Set aside.
2. Cook the Pork
In a skillet over medium heat, cook the marinated pork until fully cooked and caramelized, about 10-15 minutes. Remove from heat and shred or chop into bite-sized pieces.
3. Melt the Cheese
In the same skillet, reduce the heat to low. Place one tortilla in the skillet, add a portion of the cooked pork on top, followed by a generous amount of cheese. Place another tortilla on top and cook until the cheese is melted, about 3-5 minutes. Flip the gringa carefully and cook for an additional 2-3 minutes until both sides are golden.
4. Assemble the Gringa
Remove the gringa from the skillet and let it rest for a minute. Cut into quarters and top with chopped onions, cilantro, and pineapple.
5. Serve
Serve the gringa with guacamole and lime wedges on the side. Enjoy!
