    Prepare the Green Sauce

    In a medium saucepan, heat olive oil over medium heat. Add chopped onion, garlic, and jalapeño, sauté until softened. Add chopped tomatillos and cook for about 10 minutes until soft. Stir in chopped cilantro and season with salt and pepper. Blend until smooth and set aside.

    Fill the Tortillas

    Preheat the oven to 375°F (190°C). In a warm skillet, lightly toast each tortilla until pliable. Place a few tablespoons of shredded chicken in the center of each tortilla, roll them up, and place them seam side down in a greased baking dish.

    Assemble the Enchiladas

    Pour the prepared green sauce evenly over the rolled tortillas. Drizzle with Mexican crema and sprinkle generously with shredded cheese.

    Bake the Enchiladas

    Bake in the preheated oven for 20-25 minutes, or until the cheese is melted and bubbly.

    Remove from the oven, let cool slightly, and serve with additional Mexican crema and chopped cilantro on top.
