    Pickled Red Onion

    Slice the red onion thinly and combine with white vinegar, sugar, and a pinch of salt in a bowl. Let sit for at least 30 minutes to pickle.

    Chipotle Mayo

    In a bowl, mix mayonnaise with chopped chipotle peppers in adobo sauce. Adjust to taste and set aside.

    Beer Batter

    In a large bowl, whisk together flour, cornstarch, baking powder, salt, and black pepper. Gradually add beer until the mixture is smooth and slightly thick.

    Frying the Fish

    Heat vegetable oil in a deep skillet over medium-high heat. Dip each Mahi Mahi fillet in the beer batter, allowing excess to drip off, and carefully place in the hot oil. Fry until golden brown, about 4-5 minutes per side. Remove and drain on paper towels.

    Serving

    Serve the beer-battered Mahi Mahi with pickled red onions and chipotle mayo on the side. Enjoy!
