Chocolate Crème Brûlée

Prepare the Chocolate Mixture

In a saucepan over medium heat, combine heavy cream and chopped chocolate. Stir until the chocolate melts and the mixture is smooth.

Whisk Egg Yolks

In a bowl, whisk together egg yolks, granulated sugar, vanilla extract, and a pinch of salt until the mixture is pale.

Combine Mixtures

Slowly pour the warm chocolate mixture into the egg yolk mixture, whisking continuously to prevent curdling.

Bake

Preheat the oven to 325°F (160°C). Pour the chocolate custard into ramekins. Place the ramekins in a baking dish and fill the dish with hot water until halfway up the sides of the ramekins. Bake for 30-35 minutes until just set.

Cool

Remove from the oven and let them cool. Refrigerate for at least 2 hours.

In a bowl, combine flour, brown sugar, ground cinnamon, melted butter, and a pinch of salt. Mix until crumbly.

Spread the mixture on a baking sheet and bake at 350°F (175°C) for 10-12 minutes until golden brown. Let cool.

Assembly

Serve

To serve, place a scoop of vanilla ice cream on top of the chilled chocolate crème brûlée and sprinkle with cinnamon cookie crumble.
