Prepare the Grill
Preheat your grill or grill pan over medium-high heat.
Char the Lettuce
Cut the romaine lettuce heads in half lengthwise. Brush the cut sides with olive oil and place them on the grill, cut side down. Grill for about 2-3 minutes until charred.
Prepare the Dressing
In a bowl, mix the Caesar dressing with the anchovy fillets, mashing them together until well combined.
Assemble the Salad
Remove the grilled romaine from the grill and place it on a serving platter. Drizzle the anchovy Caesar dressing over the charred lettuce halves.
Add Toppings
Sprinkle the Italian bread crumbs and grated Parmesan cheese over the lettuce. Finish with a sprinkle of freshly cracked black pepper.
Serve
Serve warm with lemon wedges on the side for squeezing over the salad if desired.
