Citrus Mint Jam

Citrus Hoisin

Fried Hominy Crumble

Rice Wine Vinegar Meringue

Method

Prepare Tuna Tartare

1

Dice the Tuna

Finely dice the sushi-grade tuna and place it in a bowl.

2

Mix Ingredients

Add diced avocado, chopped scallions, cilantro, soy sauce, sesame oil, and lime juice to the tuna. Gently mix to combine.

Make Citrus Mint Jam

3

Cook Jam

In a saucepan, combine fresh mint leaves, sugar, orange juice, and lemon juice. Cook over medium heat until the mixture thickens, about 10-15 minutes.

4

Cool

Remove from heat and allow to cool before serving.

Prepare Citrus Hoisin

5

Mix Hoisin Sauce

In a small bowl, combine hoisin sauce with orange zest and lime zest. Mix well and set aside.

Make Fried Hominy Crumble

6

Fry Hominy

In a pan, heat vegetable oil over medium-high heat. Add drained canned hominy and fry until golden and crispy, about 5-7 minutes. Drain on paper towels.

Prepare Rice Wine Vinegar Meringue

7

Whip Egg Whites

In a clean bowl, beat egg whites until soft peaks form. Gradually add sugar and continue to beat until stiff peaks form. Add rice wine vinegar and mix gently.

8

Pipe Meringue

Pipe the meringue onto a baking sheet and bake at a low temperature (200°F/93°C) until dry, about 1-2 hours.
