Method

Preparation of Lamb Rack

Preheat Oven

Preheat your oven to 400°F (200°C).

Season Lamb

In a bowl, mix olive oil, minced garlic, thyme leaves, salt, and black pepper. Rub this mixture over the lamb rack.

Roast Lamb

Place the lamb rack in a roasting pan and roast for about 25-30 minutes or until it reaches your desired doneness.

Rest Lamb

Remove from oven and let rest for 10 minutes before slicing.

Cook Pork Belly

In a large pot, cook the diced pork belly over medium heat until crispy. Remove and set aside.

Sauté Vegetables

In the same pot, add chopped onions, carrots, and celery. Sauté until vegetables are soft.

Combine Ingredients

Add the white beans, vegetable broth, tomato confit, bay leaves, salt, and black pepper. Stir to combine.

Simmer Cassoulet

Bring to a simmer and let cook for about 20-25 minutes. Add the crispy pork belly back into the pot before serving.

Zucchini Preparation

Sauté Zucchini

In a skillet, heat olive oil over medium heat. Add sliced zucchini, season with salt and pepper, and sauté until tender, about 5-7 minutes.
