Prepare the Potatoes
Preheat your oven to 425°F (220°C). Wash and peel the Russet potatoes, then cut them into fries (about 1/4 inch thick).

Season the Fries
In a large bowl, toss the cut fries with olive oil, salt, and black pepper until evenly coated.

Bake the Fries
Spread the fries in a single layer on a baking sheet lined with parchment paper. Bake for 25-30 minutes or until they are golden brown and crispy, flipping halfway through.

Add Parmesan
Remove the fries from the oven and immediately sprinkle the grated Parmigiano-Reggiano over the hot fries. Toss gently to ensure even coating.

Serve the Parmesan fries hot, with house-made ketchup on the side.
