Method

Roll Rice & Nori

    prepare rice

    If not already cooked, prepare 2.5 cups cooked sushi rice and while still warm fold in 3 tablespoons vinegar seasoning (rice vinegar + sugar + salt) until glossy. Let rice cool to near room temperature, cover with damp cloth to keep moist.

    Place a nori sheet shiny side down on the plastic-wrapped bamboo mat. Wet hands to prevent sticking and spread about 0.6 cups of rice evenly over the nori leaving a 1/2-inch (1 cm) strip at the far edge. Press gently to adhere; do not compress too tightly.

Spicy Tuna Filling

    In a bowl combine 8 oz finely diced tuna, 2 tbsp Japanese mayonnaise, 1 tbsp Sriracha (adjust heat to taste), 1 tsp chili oil, 1/2 tsp soy sauce, 1 tbsp finely sliced green onion and 1/4 tsp sesame oil. Taste and adjust salt or heat. Keep chilled until ready to assemble.

    Place a line of 2–3 tablespoons of the spicy tuna mixture across the center of the rice on the nori (or slightly offset if making inside-out roll).

Crunch & Vegetables

    Evenly sprinkle about 2 tablespoons of tempura crunch over the spicy tuna on the nori to add texture.

    Add julienned cucumber (about 1/4–1/3 cup) in a line with the tuna so it will be inside the roll. Ensure cucumber pieces are patted dry to avoid excess moisture.

Forming the Roll

    Using the bamboo mat, lift the near edge of the nori and rice and fold over the filling to start forming the roll. Tuck the filling in with your fingers, then roll forward, applying gentle even pressure with the mat to shape a tight cylinder. Seal the far edge with a little water if needed.

    If you prefer an inside-out roll (rice outside), place plastic wrap on the mat, lay rice on the plastic, flip nori onto the rice, then proceed to add filling and roll. Sprinkle extra tempura crunch on the inside or outside as desired.

Toppings

    Place the roll seam-side down. Using a very sharp, wet knife, cut the roll into 8 equal pieces. Wipe the knife clean between cuts to keep slices tidy.

    Top each slice with a small piece of grilled unagi (total ~4 oz distributed across rolls) and a butterflied cooked shrimp (4 shrimp halved so each piece gets a portion).

    Fan or place avocado slices across the top of the roll so each piece receives a slice.

Sauces & Finish

    Drizzle eel sauce across the top of the roll (about 3 tbsp total) for sweet-savory glaze.

    Drizzle Japanese mayonnaise in a thin line over each piece (use 2 tbsp total). For added heat, finish with a light drizzle of chili oil (about 1 tsp) across the roll or dot on each piece.

    Sprinkle toasted sesame seeds over the roll and garnish the plate with pickled ginger and wasabi if desired.

Serving

    Arrange the 8 roll pieces on a serving platter. Serve immediately with soy sauce on the side. Consume fresh for best texture — tempura crunch is crispiest right after assembly.
