Prep and salt
Rinse the saba fillets briefly under cold water and pat dry with paper towels. Lightly score the skin side once or twice with a shallow diagonal cut to prevent curling. Sprinkle sea salt evenly over both sides of each fillet and let them rest, skin side up, on a wire rack or plate for 10–15 minutes to firm and draw out excess moisture.

Pat dry
After resting, blot the fillets again with paper towels to remove released moisture and excess salt. Season both sides with white pepper.

Pan-sear
Heat a large nonstick or well-seasoned cast-iron skillet over medium-high heat and add the vegetable oil, swirling to coat. When oil is shimmering (but not smoking), place the fillets skin-side down. Press gently with a spatula for 10–15 seconds to keep the skin flat. Cook, undisturbed, until the skin is deeply browned and crisp, 3–5 minutes depending on thickness.

Finish cooking
Flip the fillets and reduce the heat to medium. Cook the flesh side for 1–2 minutes until just cooked through (opaque and flaky). Total cook time should be about 4–7 minutes. Remove fillets to a warm plate and tent with foil while you finish the sauce (if using).

Finish and serve
Transfer fillets to serving plates, squeeze a lemon wedge over each, and garnish with scallions, grated daikon, and a sprinkle of shichimi or sesame seeds. Serve immediately.

Reduce
Bring mixture to a gentle boil over medium heat, then reduce to low and simmer, stirring occasionally, until slightly thickened and glossy, 6–8 minutes. Remove from heat and let cool briefly. The sauce will thicken more as it cools.

Glaze the fish (optional)
If using the tare, brush a thin layer over the skin of each hot fillet just before serving. Alternatively, brush both sides and return fish to the hot pan for 10–20 seconds per side to caramelize lightly—watch closely to avoid burning. Do not overglaze: a little tare enhances flavor without overpowering the saba.
To serve

Arrange saba fillets on plates with grated daikon to the side or on top, scatter the thinly sliced scallions, and finish with a sprinkle of shichimi togarashi or toasted sesame seeds. Serve with lemon wedges on the side and steamed rice or pickles if desired.
