Place the loose eggs into a fine-mesh sieve and rinse very gently under cold running water to remove connective tissue and blood. Move the eggs with your fingers while rinsing to avoid crushing.

Marinade (Shoyu Dashi)

Make the marinade: combine the light soy sauce, mirin, sake, chilled dashi (or low-sodium stock) and sugar in a small bowl. Stir until the sugar dissolves. Taste and adjust — the marinade should be clearly savory with a hint of sweetness, not overpowering.

Cool the marinade completely in the refrigerator if it is warm. The marinade must be cold before adding the roe to avoid cooking or altering the texture of the eggs.

Marinate for 2–12 hours depending on desired intensity. For lightly seasoned ikura, 2–3 hours is sufficient. For deeper color and flavor, marinate up to 12 hours. Do not exceed 24 hours; eggs will become overly salty and break down.

After marinating, gently drain the ikura through a fine sieve and reserve a tablespoon of marinade if you want to drizzle later.

Garnish each bowl with toasted nori strips, a few shiso leaves or microgreens, and a sprinkle of thinly sliced scallions. Add a small dab of wasabi at the side if desired. Optionally drizzle 1 teaspoon reserved marinade over the roe for extra flavor.

Serve immediately while the ikura is cold and the rice is warm. Leftover ikura keeps in a sealed container in the refrigerator for up to 3 days; do not freeze as freezing will burst the eggs.
