Tuna & Seasoning

    Prep tuna

    Pat the ahi tuna dry with paper towels. Trim any sinew and shape into a neat rectangular log if needed so sear is even. Season all sides lightly with kosher salt and freshly ground black pepper.

    Sear tuna

    Heat a heavy skillet (cast iron or stainless steel) over high heat until very hot. Add 1 tablespoon neutral oil and swirl to coat. When oil is shimmering and just smoking, place the tuna in the pan and sear for 20–30 seconds per side, rotating to brown all faces quickly so the center remains rare. Total sear time should be about 1–1.5 minutes depending on thickness. Remove and rest on a cutting board for 2 minutes.

Japanese Dressing (Tare)

    Make the dressing

    In a small bowl, whisk together soy sauce, rice vinegar, mirin, sesame oil, grated ginger, garlic, and honey until combined. Taste and adjust balance — add a touch more honey if too sharp or a splash more soy if you want it saltier. Stir in toasted sesame seeds. Set aside at room temperature.

Finishing & Garnish

    Slice tuna

    Using a very sharp knife dipped in warm water and wiped dry between cuts, slice the seared tuna against the grain into 1/4-inch (6 mm) slices. Aim for 8–10 slices from a 1/2 lb loin.

    Plate and dress

    Arrange tuna slices on a chilled or room-temperature plate, slightly overlapping or fanned. Spoon 1–2 teaspoons of the Japanese dressing over each slice or lightly drizzle across the ensemble.

    Add tobiko and onions

    Dot small spoonfuls of tobiko along the tuna slices (about 1/2 teaspoon per slice cluster) and sprinkle the fried shallots or crispy fried onions evenly to add crunch and sweetness.

    Microgreens and scallions

    Scatter microgreens and the thinly sliced scallions over the tuna for freshness and color. Keep the microgreens light so they don't overpower the fish.

    Finish with truffle oil

    Very lightly drizzle truffle oil over the plated dish — 1/4 to 1/2 teaspoon total — to impart aroma without overwhelming the tuna. If desired, add a whisper (1/4 tsp) of sesame oil for a nutty note.

    Serve

    Garnish with a lemon or yuzu wedge to offer acidity at the table. Serve immediately so the tuna remains tender and the fried onions stay crisp. Offer pickled ginger and wasabi on the side if desired.
