Tempura-battered Shrimp

Prepare shrimp
Pat shrimp dry with paper towels. Using a small knife, make three shallow diagonal cuts on the underside of each shrimp to help straighten when cooked. Lightly season both sides with 1 tsp salt and 1/2 tsp black pepper. Dust each shrimp lightly in 1/4 cup flour and shake off excess.

Make ice-cold batter
In a medium bowl, combine 1 cup all-purpose flour and 1/4 cup cornstarch. In a separate small bowl, whisk together the lightly beaten egg, 1 cup ice-cold sparkling water and 1 tsp rice vinegar. Add three ice cubes to the wet mixture to keep it very cold. Quickly fold wet ingredients into dry with a few gentle stirs — it’s okay if batter is slightly lumpy. Keep bowl over an ice bath or in the refrigerator until ready to fry to maintain cold temperature.

Heat oil
Pour vegetable oil into a deep pot or heavy skillet to a depth of about 2–3 inches (about 1 cup for a small pot). Heat oil to 350°F (175°C). If you don’t have a thermometer, test with a small drop of batter — it should sizzle and rise immediately without browning too fast.

Fry shrimp
Working in batches of 3–4 to avoid crowding, dip each floured shrimp into the cold tempura batter, letting excess drip off, then gently lower into hot oil. Fry until batter is crisp and pale golden, about 2–3 minutes depending on shrimp size. Use a slotted spoon to transfer shrimp to a wire rack set over a sheet tray or paper towel-lined plate to drain. Keep warm in a low oven (200°F / 95°C) if making in multiple batches.
Cream Cheese Crab Filling

While the shrimp fry, place 6 oz softened cream cheese in a mixing bowl and beat until smooth. Fold in 4 oz finely chopped imitation crab, 2 tbsp mayonnaise, 1 tsp Sriracha, 1 tbsp finely sliced green onions, 1/2 tsp lemon juice, 1/4 tsp salt and 1/8 tsp black pepper. Taste and adjust seasoning — add more Sriracha or lemon if desired. Transfer mixture to a piping bag or to a small bowl for spooning.

Optional warm-up
If you prefer a warm filling, briefly heat the cream cheese mixture in a small saucepan over very low heat, stirring constantly, just until warm (do not boil). Otherwise serve at room temperature or slightly chilled.

Assemble Holy Crab bites
If using mini buns: lightly toast each bun. Spoon or pipe about 1 tablespoon of the cream cheese crab filling into the bottom half of each bun or into lettuce cup. Place one tempura shrimp on top of the filling.

Garnish
Top each shrimp with a small amount (about 1 tsp) of pickled cucumber ribbons, a sprinkle of crispy fried onions or panko crumbs, and one cilantro leaf. Drizzle with extra Sriracha or spicy mayo (about 1 tsp per bite). Serve each with a small lemon wedge for squeezing.

Serve
Arrange bites on a platter and serve immediately so the tempura remains crisp. Provide extra napkins and a dipping sauce (optional soy-ginger or sweet chili).
