    Combine dry ingredients

    In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt until evenly combined.

    Mix wet ingredients

    In a separate bowl or large measuring cup, whisk the milk, egg, melted butter, and vanilla extract until smooth and slightly frothy.

    Make batter

    Pour the wet ingredients into the dry ingredients and gently fold with a spatula until just combined. A few small lumps are okay—do not overmix. Rest the batter for 5–10 minutes to allow the leavening to bloom and the gluten to relax.

Cook pancakes & mochi

    Heat pan

    Place a nonstick skillet or griddle over medium-low to medium heat and let it warm for 3–4 minutes. Wipe a little butter or oil on the surface to lightly grease it.

    Cook pancakes

    For each pancake, pour about 1/4 cup of batter onto the heated pan, spacing them comfortably. Cook until small bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook the second side until golden brown, 1–2 minutes more. Keep finished pancakes warm on a plate covered with foil or in a low oven (about 90–100°C / 200°F). Repeat with remaining batter, adding more butter/oil to the pan as needed.

    Prepare mochi

    While pancakes cook or after, warm mochi pieces briefly: either microwave mochi in a covered, microwave-safe dish for 15–25 seconds (watch carefully) until soft and slightly puffy, or add them to the pan for 10–20 seconds each side to warm and develop a slight golden exterior. Be careful—mochi gets very sticky when hot.

Assemble K-Pancake with Ice Cream

    Layer pancakes and anko

    Place one warm pancake on a serving plate. Spread about 1 to 2 tablespoons of sweet red bean paste (anko) over the pancake. Top with another pancake and repeat to make a stack of 2–3 pancakes, finishing with a top pancake.

    Add mochi and ice cream

    Nestle warmed mochi pieces around or on top of the pancake stack. Place 1–2 scoops of vanilla ice cream on the top pancake or beside the stack so it can melt over the warm pancakes.

    Finish with toppings

    Drizzle the honey or kuromitsu over the pancakes and ice cream. Sprinkle kinako and toasted sesame seeds over the top for nutty aroma and texture. Add sliced fruit if using.

    Serve immediately while pancakes and mochi are warm and ice cream is cold. Provide forks and spoons to enjoy the combination of warm pancakes, chewy mochi, sweet red bean paste, and melting ice cream.
