Soft-shell Crabs

    Prepare crabs

    Pat cleaned soft-shell crabs dry with paper towels. If not already done, remove face plate and gills, and trim claws/tips if desired. Lightly score the belly of each crab once to help even frying and prevent curling.

    Season & dust

    In a shallow bowl combine all-purpose flour, salt, pepper and seasoned salt or Old Bay (if using). Dredge each crab in the flour mixture, shaking off excess. This base flour helps the egg and panko adhere.

    Egg wash

    Whisk eggs with milk in a shallow dish until combined. Working one crab at a time, dip crab into the egg wash, allowing excess to drip off.

    Panko coating

    Press the egg-washed crab into the panko breadcrumbs, coating thoroughly on both sides and along the legs. For an extra crisp crust, press additional panko onto the belly and edges. Place coated crabs on a wire rack while you heat the oil.

    Heat oil

    In a deep skillet or Dutch oven, pour oil to a depth of about 1.5–2 inches (roughly 3–4 cups depending on the pot). Heat oil over medium-high until it reaches 350°F (175°C). If you don't have a thermometer, test with a small bit of batter: it should sizzle and float immediately.

    Fry crabs

    Fry crabs 1–2 at a time (do not crowd) for 2.5–3.5 minutes per side, turning gently once, until golden-brown and crisp. Cooking time depends on size — aim for an internal temperature of 145°F if you can measure, or until flesh is opaque and hot. Remove to a wire rack or paper towel-lined tray to drain and rest for 1–2 minutes. Keep warm in a low oven (200°F/95°C) if frying in batches.

    Finish & serve

    Sprinkle a little finishing salt or lemon juice over the fried crabs just before serving. Garnish with cilantro or shiso leaves and serve with lemon wedges and dipping sauces.

Tempura Vegetables

    Prepare vegetables

    Arrange all vegetables so they are dry and patted with a paper towel. Cut into uniform sizes so they cook evenly: sweet potato slices about 1/4" thick, zucchini batons 3" long, mushrooms left whole or halved, green beans and asparagus trimmed.

    Make batter

    In a bowl combine tempura flour and cornstarch. Add ice-cold sparkling water a little at a time and stir very gently with chopsticks or a fork — do not overmix; a few lumps are fine. Add 2–3 ice cubes to keep batter cold. The batter should be thin enough to coat but not thick like pancake batter.

    Heat oil for tempura

    Heat oil in a separate pot or the same skillet used for crabs if there's enough room and the oil was filtered. Bring oil to 350–360°F (175–180°C). Keep the batter chilled and work in small batches.

    Fry vegetables

    Dip vegetables into the batter to coat lightly, allowing excess to drip off. Fry vegetables in batches for 1–3 minutes depending on thickness: thin green beans and asparagus 1–1.5 minutes, mushrooms and zucchini 1.5–2 minutes, sweet potato 2.5–3 minutes. Fry until pale golden and crisp. Remove to a wire rack or paper towel-lined tray to drain briefly.

    Season & serve

    Lightly season tempura vegetables with a pinch of salt immediately after frying. Serve alongside the panko soft-shell crabs with dipping sauces.

Dipping Sauces & Garnish

    Ponzu-style dipping sauce

    Combine soy sauce, mirin and dashi stock in a small bowl. Add grated daikon if using. Stir and taste; adjust balance with a little more mirin (sweet) or soy (salty) as needed. Keep warm or at room temperature.

    Spicy mayo

    Mix Japanese mayo with sriracha until smooth. Adjust spice to taste. Transfer to a squeeze bottle or small ramekin for serving.

    Plating

    Arrange 1 soft-shell crab per plate with an assortment of tempura vegetables. Place dipping sauces in small bowls alongside, add lemon wedge(s) and sprinkle fresh cilantro or shiso leaves over the crabs and vegetables. Serve immediately to preserve crispness.
