Clean and prepare the wasabi rhizome
Wash the fresh wasabi rhizome under cold running water to remove soil. Using a clean vegetable brush if needed, scrub gently. Pat dry with a clean kitchen towel. Trim off both ends and any fibrous or damaged outer bits with a paring knife, leaving the firm central portion (about 40 g).

Grate the wasabi
Using an oroshigane (preferred) or a very fine ceramic or metal grater, grate the wasabi rhizome against the grain in small circular motions until you have a fine, paste-like texture. Aim for about 2–3 teaspoons of grated wasabi. Transfer the grated wasabi to a small bowl. If you do not have a grater, you may finely mince with a sharp knife, but grating releases more volatile aromatics.

Prepare the pickled ginger
If using whole pickled ginger slices, pat them dry and stack and slice very thinly into matchsticks, then finely mince until you have small, almost paste-like pieces (about 15 g). The pickled ginger adds color, sweetness and acidity characteristic of kizami wasabi.

Combine and season
Add the finely minced pickled ginger to the grated wasabi in the bowl. Sprinkle in the fine sea salt and pour the rice vinegar over the mixture. Mix thoroughly with a small spoon or spatula: mash lightly to combine while preserving a slightly coarse texture (kizami means chopped). Taste and adjust: add up to 1 teaspoon neutral oil to smooth and carry flavor if the mixture seems dry. If desired, finish with 1/4 teaspoon freshly ground black pepper or a pinch of togarashi for subtle warmth.

Rest and serve
Let the mixture rest for 5–10 minutes at room temperature to let flavors meld and the wasabi heat bloom. Serve in a small dish as a condiment alongside sushi, sashimi, grilled fish, or rice dishes. Use within 24 hours for best flavor and aroma; refrigerate if storing longer and consume within 2–3 days.

Rinse the grater and knife immediately after use to prevent wasabi pigments from staining. Clean tools with warm soapy water and dry. Label and cover any leftover kizami wasabi and refrigerate.
