Edamame
Garlic-Ginger Sauce
Finish & Garnish
Method
Edamame
- 1
Cook edamame
Bring 4 cups of water and 1 teaspoon kosher salt to a rolling boil in a medium saucepan. Add the frozen edamame and return to a boil. Cook for 3–5 minutes until bright green and tender but still slightly firm. If using in-pod edamame, cook 4–6 minutes. Drain in a colander and briefly rinse with cold water to stop cooking. Drain well and set aside.
Garlic-Ginger Sauce
- 2
Prepare sauce
While the edamame cooks, finely mince garlic and ginger. Measure soy sauce, rice vinegar, sesame oil, and red pepper flakes so they are ready to add.
- 3
Sauté aromatics
Heat a large nonstick skillet or cast-iron pan over medium heat. Add 2 tablespoons olive oil and 1 tablespoon butter (if using). Once butter melts and the oil shimmers, add the minced garlic and ginger. Sauté 30–45 seconds, stirring constantly, until fragrant and just beginning to color—do not burn garlic.

Finish sauce
Stir in 1 teaspoon red pepper flakes and cook 10 seconds. Add 1 tablespoon light soy sauce and 1 teaspoon rice vinegar, stirring to combine. Remove pan from heat and stir in 1 teaspoon sesame oil and 1/4 teaspoon freshly ground black pepper. Taste and adjust: add a pinch of kosher salt if desired (remember soy sauce is salty).

Garnish and serve
Transfer to a serving bowl. Sprinkle 1 teaspoon toasted sesame seeds and 1 tablespoon thinly sliced scallions over the top. Serve immediately with lemon wedges on the side for squeezing, and additional kosher salt to taste. Recommended to serve warm or at room temperature.
