Bring water to boil
Place 6 cups of water and 1 tablespoon kosher salt in a large saucepan and bring to a rolling boil over high heat.

Add edamame
Add 1 cup frozen edamame in pods to the boiling water. Stir immediately to separate any clumps and return to a boil.

Cook
Boil the edamame for 3 to 5 minutes until the pods are bright green and the beans inside are tender but still slightly firm. For thinner pods, use 3 minutes; for thicker pods, use up to 5 minutes.

Drain and shock
Drain the edamame in a colander. Optionally, plunge the pods into a bowl of ice water for 30–60 seconds to stop cooking and preserve color, then drain well. If serving warm, skip the ice bath and drain thoroughly.

Season
Transfer drained edamame to a serving bowl. Sprinkle with 1 teaspoon coarse sea or flaky salt and a little freshly ground black pepper to taste. Toss or shake the bowl so salt adheres to the pods.

Optional flavorings
If desired, drizzle 1 teaspoon sesame oil over the pods and toss to coat evenly. For heat, add 1/2 teaspoon chili crisp or red pepper flakes and toss. For brightness, squeeze the juice of 1 lemon wedge over the pods just before serving.

Serve
Serve immediately warm or at room temperature. To eat, pop the beans from the pods with your teeth and discard the pods.
