Dashi Broth Preparation

    Prepare the Kombu

    In a large pot, combine 4 cups of water and the kombu. Let it soak for at least 30 minutes.

    Make the Dashi

    After soaking, heat the pot over medium heat until just before boiling. Remove the kombu and add the bonito flakes. Let it simmer for about 5 minutes, then strain the broth through a fine mesh sieve or cheesecloth to remove the bonito flakes. Set the dashi broth aside.

Miso Soup Preparation

    Prepare the Mushrooms

    In a small pan, add the sliced shiitake mushrooms and mirin. Cook over medium heat for about 5-7 minutes, or until the mushrooms are tender and the liquid has reduced. Set aside.

    Combine Ingredients

    In a pot with the prepared dashi broth, bring it to a gentle simmer. Add the white miso paste, stirring until dissolved.

    Add Tofu and Mushrooms

    Add the cubed tofu and the cooked shiitake mushrooms to the miso broth. Allow to heat for about 2-3 minutes.

    Serve the Soup

    Serve the miso soup in bowls. Top each serving with torn nori sheets, a sprinkle of togarashi seasoning, and sliced scallions.
