Preparing the Shrimp
Marinate the Shrimp
In a large bowl, combine the shrimp, minced garlic, lime juice, soy sauce, red chili flakes, salt, and black pepper. Mix well to ensure the shrimp are evenly coated. Cover and marinate in the refrigerator for at least 30 minutes.
Breading the Shrimp
Prepare the Breading Station
Set up a breading station with three bowls: one with all-purpose flour mixed with salt and pepper, one with beaten eggs, and the last with panko breadcrumbs.
Bread the Shrimp
Remove the marinated shrimp from the refrigerator. Dredge each shrimp in the flour mixture, shaking off excess, then dip in the beaten eggs, and finally coat with panko breadcrumbs. Ensure each shrimp is well-coated.
Cooking the Shrimp
Fry the Shrimp
In a large skillet or deep fryer, heat oil over medium-high heat. Once hot, carefully add the breaded shrimp in batches, ensuring not to overcrowd the pan. Fry until golden and crispy, about 2-3 minutes per side. Remove and drain on paper towels.
Serving
Garnish and Serve
Transfer the crispy dragon shrimp to a serving platter. Garnish with chopped cilantro and lime wedges. Serve immediately with your choice of dipping sauce.
