Cooking Sushi Rice
1. Rinse and Cook
Rinse sushi rice under cold water until the water runs clear. Combine rinsed rice and water in a rice cooker or pot and cook according to rice cooker instructions or bring to a boil, then reduce heat, cover, and simmer for 20 minutes.
2. Season the Rice
Once cooked, transfer the rice to a large bowl. Mix rice vinegar, sugar, and salt in a small bowl until dissolved. Fold the mixture into the rice gently, and allow it to cool to room temperature.

Cooking Tofu and Broccoli
5. Sauté Tofu
In a separate skillet, heat vegetable oil over medium-high heat. Add cubed tofu and cook until golden brown on all sides, about 8-10 minutes. Season with salt and pepper to taste.
6. Steam Broccoli
Add broccoli florets to the skillet with tofu, and stir-fry for an additional 5 minutes until broccoli is bright green and tender.
Making White Miso Broth
7. Mix Broth
In a pot, combine water, white miso paste, and soy sauce. Whisk until the miso is dissolved. Bring to a simmer over medium heat and add sliced green onions. Cook for 5 minutes.
