Burger Preparation

    Prepare the Patty

    In a mixing bowl, combine the ground beef with salt and black pepper. Mix gently until well combined, being careful not to overwork the meat.

    Form the Patties

    Divide the mixture into two equal portions and shape each into a patty about ¾ inches thick. Make a small indentation in the center of each patty to prevent it from puffing up during cooking.

Cooking

    Cook the Bacon

    In a skillet over medium heat, cook the cherrywood smoked bacon until crispy, about 5-7 minutes. Transfer to a paper towel-lined plate to drain excess grease.

    Cook the Patties

    In the same skillet, or on a grill, cook the burger patties for about 4-5 minutes on one side. Flip the patties and place a slice of cheddar cheese on each patty. Cook for an additional 3-4 minutes for medium doneness.

Assembly

    Prepare the Bun

    Toast the brioche buns lightly on the grill or in a toaster until golden.

    Assemble the Burger

    On the bottom half of each toasted brioche bun, layer the lettuce, followed by the cooked patty with melted cheese, crispy bacon, tomato slices, pickles, and red onion slices. Top with the other half of the bun.
